1st (cooked) meal

A few weeks into my move, I unexpectedly had to go back home. After heading back, I was horribly homesick.

It was quite an emotional time and I was feeling like homey, comfort food.

So I cooked Sinigang. I had taken packets of my favorite Pilipino food to bring over since I wasn’t sure I would find that stuff here. Singang is a wonderfully complex sour, tamarind soup that takes quite a while to make with a multitude of ingredients.

This my ghetto version…

BTW I normally eat rice every day, but I brought over a big Costco bag of Quinoa so I’ve been substituting that in everything.

Ingredients:

  • Sinigang packet
  • Pork Belly
  • Brown Onion
  • Spinach
  • Quinoa

It was not great. Next time I’ll try adding  more stuff to it.
